According to Sue (Hester) Hulsey, the "Shanghai" name came from Shanghai roosters in that area. Henry and Louisa "Lucy" (Stock) Metzger lived in a 2 story Victorian house north of Kinmundy (and south of where the Hulsey home is today). There was a large cottonwood tree on there property as well. Lucy raised exotic birds including peacocks and Shanghai roosters, so the community became known as the "Shanghai" area. The Metzger couple donated the land for the Shanghai Church and Shanghai School too.

We, at the church are pleased with the good order, attention and interests shown by the Christian people. The meeting has been a soul feast from the very beginning. We intended on closing last Friday night, and going bound in the spirit to Trilla, Illinois, but the interest will keep us here this week. When Rev. Bankson first came here, we thought he was a holy ghost preacher and we still think so. We are glad to see Shanghai community built up in the faith of Jesus Christ and we are praying for great things to come from the meeting, for God always gives his people a reward for their labor. W.C. SANDERS, Pastor."

- Dec. 30, 1926:
Shanghai.
There's a place I long to be,
It's the dear'st spot on earth to me -
Around the dear old Shanghai Church upon the hill.
There's the place where God has blessed me,
And His spsiriti he'er has left me
And Shanghai now and always will be Home to me.
It's there I see familiar faces
From the dear old home-like places,
As they gather at the Church each Sunday morn.
Though many, who once gathered there, are scattered,
Some have gone to homes above,
Some to Foreign fields to battle with the Huns.
Yet the dear old church remains the same.
And I'll never forget the name
For it's Shanghai now and ever more for me.
And when I leave this world to rest,
With my hands upon my breast
Take me to the dear old Church upon the hill.
For when I'm place beneath the sod,
My soul will be with God
And those who've met at Shanghai long ago.
Written by Nettie STEVENS in 1918."
